Shot these couple of weeks ago, result of lacking inspiration.
Grabbed some serving trays and shot macro. Placed these on white
sheet and no strobes used, just ambient light from window. Edited
the image in ACR and PS as tiff. Enhanced reds, erased shadows,
sharpened and softened.
Winter must come to an end now, its cold and so much snow everwhere.
Weather forecaster says its going to be colder next week, again, brr.

Prime Rib Cooking Times

Create a wet-rub-marinade coating from the following
12 juniper berries, ground first then add
? tsp. bay leaf, ground second, then add
2 Tbs. ground, fresh rosemary
2 Tbs. ground, fresh sage
2-3 anchovies, ground
? cup of olive oil
1-1/2 Tbs. Dijon mustard
Create salt rub coating of the following
Grind first 1/3 cup salt plus 1 Tbs. mixed pepper corns and set aside
Grind second ? cup, snugly packed fresh basil and ? cup snugly packed fresh parsley
Mix with a fork the two grindings from above and set aside.
The symphony’s epiphany
Peel 4 cloves of garlic, cut into quarters, length wise, so they can be inserted lengthwise into meat
Make slits in the side of the roast and insert half the garlic cloves. Repeat this on the other side.
Lay out a large piece of plastic wrap and place the roast on it’s side, atop plastic.
Spoon on 25% of the wet-rub-marinade across a side, puncture with a fork to help it penetrate. Then spoon on the salt rub coating, using about 25%
Repeat this on all the sides, saving 50% of the rubs for the top. As you turn the roast over, cover with plastic so seasonings will not fall off.
Place in refrigerator for overnight. If on a grill use indirect heat and a water pan underneath. If on a smoker, I don’t even add any wood, I just let it cook slowly in a water smoker and pick up ambient smoky flavors. Cook slowly until done to your liking. typically using a thermometer to test.
